For the busy/working women, I like to cook this when I know I will be home late!

Ingredients:
1 lb. boneless skinless chicken breast strips
2 Tbsp. taco seasoning mix
2 Tbsp. flour

1 red pepper cut into small pieces
1/2 of a small red onion cut into small pieces
1 cup frozen corn
1 1/2 cup thick n' chunky salsa
1 cup shredded mexican four cheese

Directions:
First, Toss chicken in flour and taco seasoning mix. Place in bottom of crock pot. Then mix in both peppers, onion and corn. Once mixed throughly pour in salsa. Mix together. Cover crock pot. Cook on Low for 6-8 hours or High for 3-4 hours. Stir once an hour. Then top with cheese once done. Spoon over white rice and serve!
