Fried Pickles

I love pickles and frying them, makes them even better!!!

Ingredients:
buttermilk
1 11 oz. jar of dill pickle chips
2 c. whole wheat flour
1 c. all purpose flour
2 tspn. salt
1 tspn. garlic
1 tspn. paprika

Directions:
Drain the full jar of pickles, I drained them and then placed them on a paper towels and let them sit there for about 10 min. Then place pickles into the buttermilk. Place each pickle slice into the mix (mix equals both flours, salt, garlic & paprika mixed together in a bowl) then fry until golden brown.

Crock Pot Cheese Chicken

Ingredients:

3 boneless skinless chicken breasts
2 cans of cheddar cheese
1 can cream of chicken
1 small yellow onion

Directions:
Place chicken in crock pot, I seasoned my with salt, pepper and garlic but you don't have to. Then mix in    both cans of cheese and can of cream of chicken. Cut up onion in small pieces and place on top and cover. Cook on high for 5 hours. Stir and shred chicken at about 2 1/2 hours and continue to stir and shred every half hour til time is up. I served over mashed potatoes and it was delicious!

Feta Lemon Green Beans

Yum!

Ingredients:

I used a big bag of frozen steamable/microwavable  green beans
1 lemon
feta cheese
olive oil

Directions:
Follow directions on bag to cook green beans. Then coat with olive oil and lemon juice. I didn't measure either. I just judged by taste. Then sprinkled with feta cheese.

Chicken Rice-A-Roni Casserole

Ingredients: 
1 box chicken flavor Rice-A-Roni
1 can cream of chicken soup 
1 cup sour cream 
3-4 cups cooked, chopped chicken 
1 (6 oz) can French fried onions


Directions:
Preheat oven to 350 F.

Prepare Rice-A-Roni according to package directions. Add soup, sour cream and chicken.  Stir to combine.  
Spread rice mixture in a lightly sprayed 9x13 pan.  Top rice with fried onions.  Bake uncovered for 30 minutes.

Doritos Taco Bake

I made this for dinner tonight and it is DELICIOUS and EASY!!

Ingredients:

1 lb. hamburger
1 pkg. taco seasoning
8 oz. sour cream
1 pkg. of 8 crescent rolls 
1 can tomato sauce
1 can diced tomatoes 
1 c. shredded cheese
1 bag of Nacho Cheese Doritos


Directions:


Brown hamburger and drain. Add taco seasoning, tomato sauce and diced tomatoes. Then Simmer for about 5 minutes so its good and mixed. In 9x13 dish, press out crescent rolls and roll them to form crust. Layer hamburger mix on top of crescents and top with cream cheese and shredded cheese. Then crush doritos and place evenly on top. I used about 1/2 to 3/4 of the bag.

Chocolate Toffee Potato Chips

Yum!! Got this from Paula Deen! She is amazing!!

Ingredients:

1 bag of Ruffles potato chips (13.5 oz bag)
2 bars of semisweet chocolate, melted (4 oz bars)
1 bag of toffee bits (8 oz)

Directions:

Line a couple baking sheets with parchment paper. Then place potato chips around the baking sheets. Drizzle with melted chocolate and sprinkle with toffee bits. Let stand until chips are set.

Peanut Butter Chocolate Bars

Who doesn't love Peanut Butter & Chocolate!!

Ingredients:

1 package plain yellow cake mix (18.25 oz)
1/2 cup melted butter 
2 tablespoons butter (keep separate from melted butter) 
1 cup creamy peanut butter
2 eggs
1  package semi-sweet chocolate chips (12 oz)
1  can sweetened condensed milk (14 oz)
2 teaspoons vanilla

Directions: 

Preheat oven to 325 degrees. Then Combine cake mix, melted butter, peanut butter, and eggs in a large bowl using a mixer or spoon. Press this into a 9X13 pan reserving 1 cup to 1 1/2 cups of the mixture to crumble on top. In a small pot, melt chocolate chips, sweetened condensed milk, and butter. Remove from heat and stir in the vanilla. Spread chocolate mix over the mixture in the pan and then crumble the 1 cup to 1 1/2 cups of cake mixture on top evenly. Bake for 20-25 minutes. Once cooled cut into squares and serve! Always delicious with fresh strawberries or vanilla ice cream!
